Spare Ribs with Lotus Root and Mushroom

Approximately 2 hours

INGREDIENTS

  • 800 ml

    Swanson Clear Chicken Broth

  • 350 g

    Spare ribs (rinsed & pat-dried)

  • 25 g

    Chinese mushroom (soaked, pat-dried & cut into half)

  • 400 g

    Lotus root (peeled, sectioned & blanched)

  • 2 cloves

    Garlic (sliced & pan-fried)

  • 4 slices

    Ginger (pan-fried)

  • As needed

    Granulated sugar

  • As needed

    Oil

  • 25 g

    Spring onion (sectioned)

MARINADES

  • 2 tsp

    Swanson Concentrated Chicken Stock

INSTRUCTIONS

Step 1:

Prepare the spare ribs: :

  • Mix spare ribs with Swanson Concentrated Chicken Stock and let it marinate for 15 minutes.
  • Afterwards, pan-fry until fragrant and set aside.

Step 2:

Prepare the mushrooms: :

  • Mix mushrooms with sugar and oil and set aside.

Step 3:

Cook the spare ribs: :

  • Add spare ribs, lotus roots, mushrooms, garlic and ginger into a bowl. Add Swanson Clear Chicken Broth until it barely covers the ingredients.
  • Cover with a lid (or tinfoil) and steam for 1.5 hours till tender.

Step 4:

Prepare sauce and serve::

  • Take out the solid ingredients, filter the broth and simmer until it thickens.
  • Afterwards, add the solid ingredients back to the broth and mix. Garnish with spring onion sections and serve hot.

Tip: Choosing small premium mushrooms and soaking them in cool water twice enhances the mushroom flavor.
