Special Fragrant Chicken Pot

MARINADES

SPICES
Spice Mix 1:

Shallots

8 cloves
Garlic

Spring onion (cut into sections)

Spice Mix 2:

Star anise

INSTRUCTIONS
Step 1:
Marinate the chicken:
- Mix the chicken pieces with the marinade and let sit for 20 minutes.
Step 2:
Stir-fry the chicken:
- Heat 2 tbsp oil in a pan, stir-fry the onion and marinated chicken until fragrant, then set aside.
Step 3:
Combine Spice Mix 1 & 2:
- Heat another 2 tbsp of oil, stir-fry Spice Mix 1 until aromatic.
- Add yellow wine, then stir-fry Spice Mix 2 until fragrant.
Step 4:
Simmer the chicken:
- Add the chicken and onions back in along with half of the chicken broth.
- Bring to a boil, then simmer over medium heat until the chicken is fully cooked.
Step 5:
Finish and serve:
- Finally, add spring onion and coriander just before serving.
Tip: After finishing the chicken hotpot, pour in the remaining chicken broth and add your favourite hotpot ingredients to enjoy a second round of hotpot.
