Winter Melon with Jinhua Ham

3-4 Servings

Approximately - 1 hour

INGREDIENTS

  • 800 ml

    Swanson Clear Chicken Broth

  • 1 kg

    Winter melon (peeled & removed seed)

  • 60 g

    Jinhua ham

  • 1 tsp

    Chinese cooking wine

  • 1⁄2 tsp

    Sugar

  • 2 slices

    Ginger

  • some

    Sesame oil & white pepper

  • some

    Potato starch mixture for thickening

INSTRUCTIONS

Step 1:

Prepare the winter melon::

  • Cut winter melon into 12 sections (3 cm thick x 6 cm length x 5 cm width).
  • Split in the centre but do not cut through.

Step 2:

Prepare the Jinhua ham::

  • Cut Jinhua ham into 12 slices.
  • Place in deep dish. Add Chinese cooking wine and sugar.
  • Steam for 2 minutes. Remove and set aside.

Step 3:

Combine and steam::

  • Stuff Jinhua ham slices into winter melon and arrange in deep dish.
  • Add Swanson Clear Chicken Broth and ginger, steam for 40 minutes until it becomes soft and translucent.

Step 4:

Reduce and serve::

  • Take out ingredients from the pot and boil the broth till it reduces to 1⁄4.
  • Add sesame oil and white pepper.
  • Thicken sauce with potato starch mixture.
  • Pour sauce over the winter melon and serve hot.

TIP:

  • The dish will be more flavourful if cooked with a heavy winter melon that has dark green skin and a waxy surface.
